This chilled mango sago is a refreshing dessert that blends silky mango puree with creamy coconut milk and tender sago pearls. Inspired by Southeast Asian flavors, it's layered with sweet-sour mango chunks and finished with a hint of mint for brightness.

Instructions

  1. Cook the Sago Pearls

    Prepare the sago according to the package instructions, stirring occasionally to prevent clumping. Once translucent and fully cooked, immediately transfer to an ice bath to stop the cooking and keep the pearls pleasantly chewy.

  2. Mix with Coconut Milk

    Drain the cooled sago and place it in a bowl. Gently stir in coconut milk until evenly coated. Let it chill while you prep the mango.

  3. Make the Mango Puree

    Add fresh mango flesh to a blender with a couple tablespoons of water. Blend until smooth and silky.

  4. Assemble the Dessert

    In serving glasses or bowls, layer a generous spoonful of sago, then pour over the mango puree. Top with extra mango chunks and a few mint leaves for a refreshing finish.
