Crisp on the outside, creamy in the middle, and full of flavor in every bite - these nests are perfect for brunch, snacking, or impressing guests with something delightfully unexpected.
Instructions
-
Prep the Ingredients
Cut the potatoes and spam into thin matchstick-sized strips. Finely chop the green onions.
-
Mix the Batter
In a mixing bowl, combine the potatoes, spam, chopped green onions, cornstarch, freshly ground black pepper, and egg whites. Mix until everything is evenly coated and slightly sticky.
-
Shape the Nests
Heat a lightly oiled frying pan over medium heat. Scoop about 3 tablespoons of the mixture onto the pan and shape it into a circular nest. Use a pair of chopsticks or spoon to gently create a hole in the center.
-
Add the Yolk
Carefully drop one egg yolk into the center of each nest.
-
Fry to Golden Perfection
Cook until the bottom is golden and crisp, then carefully flip and cook the other side until golden brown and cooked through.
-
Serve and Garnish
Plate the egg nests and garnish with a sprinkle of fresh chopped green onions.
Serve warm - crisp on the edges, creamy in the center.
