These Crispy Shrimp & Veggie Bites bring together the umami of shrimp, the sweetness of corn, and the crunch of seaweed in one bite-sized treat. Ground shrimp is mixed with shredded carrots, green onions, and seasoning, then pan-fried on nori squares until golden. They’re simple, satisfying, and packed with flavor — ideal for entertaining or a quick savory snack.
Using a cleaver or food processor, finely grind the shrimp until it forms a coarse paste.
In a large bowl, combine the ground shrimp, shredded carrot, chopped green onion, sweet corn, cornstarch, chicken powder, and sugar. Mix thoroughly until everything is well combined and sticky.
Cut a sushi nori sheet into 4 equal squares. Place about 1 tablespoon of the shrimp mixture onto each square and gently spread it evenly to cover the surface.
Sprinkle a few black sesame seeds on top of each patty for extra texture and presentation.
Heat 1 teaspoon of oil in a non-stick skillet over medium heat. Carefully place each seaweed square filling-side up. Cook for 3–4 minutes on each side, or until golden brown and cooked through. Handle gently when flipping to avoid tearing the nori.
