This quick and creative recipe turns humble pantry staples—potatoes, Spam, and eggs—into a satisfying, golden-brown nest with a rich, runny yolk center. Perfect as a hearty breakfast, brunch treat, or a snack, these crispy fritters are packed with flavor and texture.
Peel the potatoes and cut them in half. Slice into very thin pieces, then shred them into matchstick-sized strips. Repeat the same process with the Spam.
Finely chop the green parts of the scallions. Set aside a bit for garnish if desired.
In a large mixing bowl, combine the shredded potatoes, shredded Spam, chopped scallions, cornstarch, ground black pepper, and egg whites. Mix thoroughly until the ingredients are fully incorporated and lightly sticky.
Heat a pan over medium-low heat and add a small amount of olive oil. Scoop about 2 spoonfuls of the mixture into the pan and gently shape into a flat, round nest.
Use a spoon to create a small well in the center of the nest. Gently drop an egg yolk into the hole, being careful not to break it.
