Shrimp Toast is a classic Asian-inspired appetizer featuring soft milk bread filled with a seasoned shrimp paste, fried to golden perfection. The combination of crisp bread, savory shrimp, and a creamy, spicy-sweet dipping sauce makes this a standout dish that’s perfect for entertaining or indulging at home.
In a food processor, combine the shrimp, garlic, salt, white pepper, sugar, Shaoxing wine, MSG, potato starch, and egg white. Blend until smooth. Add sesame oil and pulse for 10 seconds until fully incorporated.
Tip: For the best texture, ensure the shrimp is very cold before blending—this helps create a bouncy, springy paste.
Transfer the shrimp paste to a bowl and fold in the chopped scallions.
Trim the crusts off the milk bread (save the scraps to make croutons later). Spread about 1 1/2 tbsp of shrimp paste evenly on one slice of bread. Top with another slice to form a sandwich. Smooth the edges so no filling oozes out.
Heat oil to 350°F (175°C). Deep fry the sandwich until golden brown, about 3–4 minutes. Alternatively, air fry at 375°F (190°C) until crisp and golden for a lighter option.
Once slightly cooled, cut each toast diagonally into triangles.
In a small bowl, whisk together mayonnaise, Thai chili sauce, honey, and sesame oil. Adjust sweetness and spice to taste.
Arrange the shrimp toasts upright on a plate to showcase the shrimp filling. Serve with dipping sauce on the side.
