    Peel the potatoes and cut them in half. Slice into very thin pieces, then shred them into matchstick-sized strips. Repeat the same process with the Spam.

    In a large mixing bowl, combine the shredded potatoes, shredded Spam, chopped scallions, cornstarch, ground black pepper, and egg whites. Mix thoroughly until the ingredients are fully incorporated and lightly sticky.
