Parboil the Lobster
Boil the lobster tail halfway — just until the shell turns red but the meat remains slightly translucent.

Cool and Prepare the Lobster
Transfer the lobster immediately into an ice bath to stop the cooking process. Once cooled, cut the tail in half lengthwise to expose the meat. Remove the meat, chop into bite-sized pieces, and set aside.

Make the Lobster Broth
In a pot, melt 1 tablespoon of butter. Add the lobster shells, shallot, and crushed garlic. Pour in pasta water and simmer for about 10 minutes to extract all the flavor.
Strain and set aside the golden lobster broth — this will be your flavor-packed base.

Shred your choice of cheeses and mix them together in a bowl. Reserve about ⅔ cup for topping later.
